We work with spontaneous fermentation, so we don't add any yeast. The yeasts present on the fruit and in... our workshop take care of that! Our apples are old varieties from the region, "knife" apples rather than cider apples. This gives the cider its own specific characteristics, including acidity and lightness. The first fermentation takes place in stainless steel vats.
The Gewürzt pomace is left over from pressing the Mycélium, Gentiane and Arthur wines at Aubel. They are infused at the end of the first fermentation and add floral and vinous notes to the cider. The bubbles set in bottles. A must for every table! Read more
