Gruyère France IGP BIO is a raw milk cheese with a pressed cooked paste. Its great distinction from its Swiss cousin is that its paste has holes. A Swiss Gruyère cheese does not have holes, contrary... to certain beliefs. Emmental and Gruyère are often confused, although the two cheeses are completely different. The holes in Gruyère France PGI are small (equivalent to a pea or a cherry).
The flavour of this cheese is particularly fruity, which makes it a hit with gourmets. It is made from the milk of Montbeliarde cows (exclusively) which are fed on grass, hay or cereals without fermented feed such as silage. Le Gruyère France PGI is made at the Lavigney dairy near Vesoul in the Bourgogne-Franche-Comté region.
The raw, ultra-fresh milk is collected within 24 hours and is not transported more than six hours from the processing site. These are the requirements of a protected designation of origin specification added to the rigour of a controlled organic production specification. A guarantee of excellence and a high quality product.
