This mushroom has a sweet and pleasant aroma and remarkable nutritional properties, with a wealth of various B vitamins, vitamin D, iron and potassium. Its main active compound is lentinan, a sugar that is said to have anti-cancer properties. It is often used in the East as a food supplement. Shiitake is said to have strong antioxidant properties, is an excellent source of vitamin D, rich in dietary fibre, vitamins and minerals. Read more
